Fried apples with goat's cheese, sage and blackberries
Fried apples with creamy goat's cheese, crisp sage and fresh blackberries. A simple dish with a lovely balance of sweet, salty and fresh flavours that works perfectly as an elegant starter.
A simple starter with plenty of flavour
Fried apples are a good example of how a few ingredients can create a dish with plenty of character. When the apples are fried until golden in butter with sage, they become soft and lightly caramelised, while the goat's cheese melts slightly and adds a creamy contrast.
The fresh blackberries add a slight tartness that balances the mild cheese and sweet apples. If you would like a little extra depth, finish the dish with a few drops of truffle oil just before serving.
For this recipe, a ZERO frying pan 26 cm is an ideal choice, as it provides even heat so the apples develop a lovely golden crust. A sharp chef's knife also makes it easy to core the apples and cut them into even slices. A walnut chopping board also provides a stable work surface for tasks such as coring and slicing the apples.

Why do apples and goat's cheese go so well together?
The gentle sweetness of the fried apples and the creamy goat's cheese create a classic flavour combination. The sage adds aromatic depth, while the blackberries provide a fresh contrast that brings the dish together.
Can you use other fruits?
Yes, you can easily vary the dish with other fruits. Pears are an ideal alternative to apples, and peaches or figs also go well with the creamy goat's cheese and aromatic sage. This makes it easy to adapt the dish to the season or the fruit you have to hand.
