Onion marmalade

A sweet, rich onion marmalade with red onions, brown sugar, apple juice and white wine vinegar. Perfect as accessories for roasts, balancing the saltiness with a mellow, slightly tangy flavour.

A classic onion marmalade full of flavour

Onion marmalade makes simple accessories that can lift many dishes. When red onions are allowed to simmer gently, they develop a natural sweetness which, together with brown sugar, apple juice and white wine vinegar, creates a lovely balance of sweet and tangy.

The finished marmalade has a soft texture and a rich flavour that goes particularly well with roasts. It can be made well in advance, cooled and served when the rest of the meal is ready.

For this recipe, a 14cm saucepan is a good choice, as it gives the onions room to simmer evenly. A sharp chef's knife also makes it easy to slice the red onions finely so they cook evenly.

Tips for the best onion marmalade

Stir regularly while simmering so the sugar is distributed and the onions cook evenly.

Let the marmalade cool before serving. The flavour becomes more rounded when it has time to settle.

Accessories with sweetness and balance

Onion marmalade makes classic accessories where just a few ingredients create plenty of flavour. The combination of red onions, brown sugar, apple juice and white wine vinegar produces a marmalade with sweetness, acidity and depth.

It goes particularly well with roast meat and is an easy way to add extra flavour to the meal. Its soft texture and rounded flavour make it accessories that complement many classic dinner dishes.

Why add apple juice?

Apple juice adds a mild fruity sweetness and fresh acidity that balance the caramelised onions. Together with the white wine vinegar, it gives the onion marmalade a rounded, harmonious flavour in which sweetness and tanginess come together beautifully.

What else can onion marmalade be used for?

Onion marmalade makes versatile accessories that go with much more than roast meat. It also tastes lovely with cheeses, burgers, sandwiches or as a sweet and tangy element on a tapas spread.

Its rich flavour also makes it suitable as accessories for grilled dishes or on a slice of toast, adding both depth and a lovely balance of sweetness and acidity.
