Tomato soup with olives and capers

A rich and flavoursome tomato soup with chopped tomatoes, aromatic spices and a fresh touch from olives and capers. A simple soup that is quick to make and perfect as a warm meal all year round.

A classic tomato soup with plenty of flavour

There is something special about a good tomato soup. The chopped tomatoes create a rich base, while onion, garlic and oregano give the soup a lovely depth. Finally, olives and capers add saltiness, freshness and character, making the dish extra interesting.

For this recipe, our large ZERO pot 28 cm is an obvious choice. It provides plenty of room for both stock and tomatoes, allowing the soup to simmer gently and develop its flavour. Our cordless mini chopper also makes it easy to chop onions, garlic, olives and herbs in no time.

Recipe for tomato soup with olives and capers

Preparation: 10 min.
Cooking: 20 min.

Ingredients

Tomato soup

  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, finely chopped
  • 1 tin (400 g) chopped tomatoes
  • 500 ml vegetable or chicken stock
  • 1 tsp. sugar
  • 1 tsp. dried oregano
  • Salt
  • Freshly ground pepper

Accessories

  • 100 g black olives, cut into small pieces
  • 2 tbsp. capers, roughly chopped
  • 1 tbsp. fresh basil or parsley, chopped

Method

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté for 5-7 minutes until soft and translucent.
  3. Add the finely chopped garlic and cook for another 1 minute until fragrant.
  4. Add the chopped tomatoes, stock and sugar to the pot.
  5. Add oregano, salt and freshly ground pepper, bring the soup to the boil and simmer for 15-20 minutes.
  6. If you prefer a completely smooth and creamy soup, you can blend it directly in the pot with a hand blender.
  7. Season the soup to taste with salt and pepper.
  8. Add the chopped olives and capers and stir them gently into the soup.
  9. Let the soup simmer for a couple of minutes until the olives and capers are heated through.
  10. Pour the soup into bowls and garnish with freshly chopped basil or parsley.

Tip for an extra flavoursome tomato soup

Let the soup simmer for the full recommended time so the tomatoes, stock and spices can develop a deeper, more rounded flavour.

If you prefer an extra smooth texture, blend the soup until completely smooth before adding the olives and capers. This preserves their texture and gives a lovely bite when served.

Serving

Serve the tomato soup piping hot to bring out the best in the rich tomatoes, aromatic spices and salty olives. Basil or parsley adds freshness, while capers provide a slightly tangy contrast.

Serve with a piece of crusty bread on the side, perfect for dipping into the hot soup.

To make the presentation a little more inviting, sprinkle a little extra freshly chopped basil or parsley over the soup just before serving. This adds both colour and a lovely, fresh appearance.

This simple soup shows how much flavour can be created with just a few good ingredients. The combination of tomatoes, stock, olives and capers makes a warming dish full of character, perfect for weekdays and weekends alike.
