Creamy onion soup with pearl barley
A rich and warming onion soup with caramelised onions, strong beef stock and pearl barley. The cream gives the soup a smooth, creamy finish, while sage and crispy toppings add extra character.
A classic soup with plenty of depth
There is something special about a good onion soup. When the onions are allowed to cook slowly, they develop a sweetness and depth that form the foundation of the whole dish. Here, they are combined with strong beef stock, white wine and pearl barley, which makes the soup more filling and gives it a lovely texture.
It is a soup that is perfect for chilly days when you feel like something warm and tasty. It is also simple to make and requires only a few ingredients.
For this dish, our Hybrid Non-stick pot 24 CM is an obvious choice, offering plenty of room for the onions, stock and pearl barley. Its suitable size makes it easy to let the soup simmer gently while allowing the ingredients to develop their flavour without overcrowding the pot. A medium-sized pot is therefore a practical choice for this type of hearty soup.

Tip for an extra-rich onion soup
Give the onions plenty of time in the pot to develop their natural sweetness and deep flavour. This helps give the soup the characteristic richness that makes all the difference.
For an even more rounded flavour, let the soup simmer for a couple of extra minutes after adding the stock. This gives the ingredients more time to come together and develop their flavour.
Serving
Serve the soup piping hot to bring out the best in the soft onions, smooth cream and rich stock. The homemade bread croutons add a lovely crunch, while sage and leek tops add freshness and a lovely contrast to the rich soup.
To make the presentation a little more inviting, garnish the soup with an extra sprinkling of sage and place the croutons on top just before serving. This adds both texture and a more attractive appearance in the bowl.
It is a warming dish that shows how a few simple ingredients can be transformed into something special. The combination of caramelised onions, strong stock and pearl barley creates a soup that is both filling and full of homemade comfort-food flavour.
