Slow-cooked chicken with red wine and crisp vegetables
"A classic, flavoursome slow-cooked dish with chicken, bacon and vegetables, where red wine and stock bring everything together in a rich, aromatic sauce. Perfect for a cosy dinner where the food can mostly look after itself."
There is something special about a good slow-cooked dish that is given time to develop its flavour. The aroma of chicken, bacon and herbs fills the kitchen as the dish gently bubbles away. It is the kind of food that feels both homely and a little special at the same time.
This dish is both simple and full of flavour. With a few steps and good ingredients, you get a deep, rounded sauce that goes perfectly with potatoes, mash or rice. A roomy pot – such as the ONYX Cookware sauté pot with efficient heat distribution – makes it easy to brown the ingredients and bring the dish together in one place.
Recipe
Serves: 4.
Preparation: 20 min.
Cooking: 60 min.
Ingredients
- Whole chicken
- 25 g butter
- 200 g diced bacon
- ½ jar drained pearl onions (approx. 100 g)
- 400 g button mushrooms, quartered
- 2 tbsp plain flour
- 5 dl good red wine
- 3 dl chicken stock
- 3 garlic cloves, sliced
- 5 carrots
- 2-4 bay leaves
- 1 sprig thyme
- salt and pepper
Method
1. Cut the chicken into approx. 10 pieces: 2 drumsticks, 2 thighs, 2 breasts (each cut in half) and 2 wings. Season with salt and pepper.
2. Brown the chicken pieces in butter in a large pot, then remove them.
3. Brown the bacon and pearl onions in the pot, then fry the mushrooms.
4. Sprinkle over the flour and cook for approx. 1 minute more.
5. Add the browned chicken pieces, red wine, stock, carrots cut into bite-sized pieces, garlic, thyme and bay leaves.
6. Cover the pot with lids and let the dish simmer for approx. 60 minutes.
7. If desired, remove the chicken pieces and let the sauce reduce a little. Return the chicken to the pot before serving.
Serving
Serve the dish as it is, or let the sauce reduce a little for a more intense flavour. It goes perfectly with mashed potatoes, boiled potatoes or rice, which can soak up the rich sauce.
It is a dish that brings people together around the table and creates a warm, relaxed atmosphere. Simple to make, yet full of depth – just as a good slow-cooked dish should be.
