Clafoutis with blueberries
A classic French clafoutis with juicy blueberries and a light, airy batter with a hint of vanilla. A simple dessert, baked until golden in the oven and served with a light dusting of icing sugar.
A French dessert with simple ingredients
Clafoutis is a lovely oven-baked dessert in which a light batter surrounds fresh berries and turns golden with a soft, almost creamy centre. The blueberries add natural sweetness and juiciness, while vanilla gives the batter a mild, rounded flavour.
It is a dessert that is both easy to make and lovely to serve. It is just as suitable for a cosy afternoon with coffee as it is for rounding off a good meal, and tastes delicious both warm and slightly cooled.
For this recipe, a sauté pot 28 cm is a good choice, as it can be used both on the hob and in the oven. Our stand mixer also makes it easy to mix the batter until completely smooth for an even consistency.

What is a clafoutis?
Clafoutis is a classic French dessert in which berries or fruit are baked in a soft batter that resembles a cross between pancake batter and a light oven-baked cake. The result is a dessert with a golden surface, a creamy centre and juicy berries in every bite.
It is simple to make, yet still feels a little elegant on the table. Clafoutis can be served warm straight from the oven or briefly warmed before serving, and a light dusting of icing sugar gives it a lovely, inviting appearance.
Serving
Serve the clafoutis warm with a light dusting of icing sugar to bring out the soft batter and juicy blueberries. It works both as a comforting dessert and as a sweet treat with afternoon coffee.
If you have baked it in advance, you can warm it briefly before serving. This brings out the soft consistency and mild vanilla flavour, making the dessert feel freshly baked.
