Pulled beef in tortillas with coleslaw and apple

Pulled beef i tortillas med coleslaw og æble

Pulled beef is the kind of food that is perfect for a quiet day at home or for having guests over when you want to make something delicious without standing at the stove the whole time. Seasoned with soy sauce, brown sugar and warming spices, the beef shoulder develops plenty of flavour as it slow-cooks until it is completely tender and easy to pull apart with two forks.

Once the meat is ready, the rest is mostly about putting everything together: crisp coleslaw, thin slices of green apple and warm tortillas. This makes a lovely combination of juicy meat and fresh, crunchy accessories, making the dish easy to serve, whether for an everyday meal or when guests come over.

Ingredients

  • 1.5 kg beef shoulder

  • 1 dl brown sugar

  • 1 dl soy sauce

  • 2 star anise

  • 1 tbsp fennel seeds

  • 1 tsp chilli powder

Accessories

  • 2 packs ready-made salad: coleslaw

  • 3 green apples

  • 8 tortillas

Method

  1. Mix together a marinade of brown sugar, soy sauce, star anise, fennel seeds and chilli powder.

  2. Pour the marinade into a bag with the meat and keep it in the fridge. If possible, marinate the meat a day in advance.

  3. Cook the meat in a pot for 8-10 hours at 100 degrees.

  4. Take it out, pull the cooled meat apart with two forks, stir in the remaining marinade from the pot and serve with the meat.

  5. Thinly slice the apples and toss them with the fresh coleslaw.

  6. Warm the tortillas in the pan. and serve the pulled beef in a tortilla with coleslaw as accessories.

When serving pulled beef

Serve the pulled beef while the tortillas are warm, and let everyone fill their own tortilla at the table. Coleslaw with crisp apples provides a fresh contrast to the tender meat, and any leftovers taste at least as good the next day.
