Recipe: Crispy Salmon Poke Bowl
Serves: 2–3 people
Time: 30–40 minutes (including marinating time)
Ingredients
For the salmon + marinade/dressing:

300 g fresh salmon, cut into cubes

1 tbsp olive oil

1 tbsp soy sauce
-
1 tsp sesame oil
-
1 tsp honey
-
1 tsp sriracha (or to taste)

1 tsp garlic powder
-
½ tsp onion powder
-
½ tsp chili flakes (optional)

Salt and pepper
-
About 100 ml panko breadcrumbs
For the bowl:

200 ml sushi rice (cooked and slightly cooled)

1 cucumber
-
1 carrot
-
½ ripe mango
-
1 small avocado
-
1 spring onion
-
Fresh coriander or parsley
-
Sesame seeds
-
Lime wedges
How to Make It
1. Marinate the salmon
In a bowl, mix together the marinade ingredients: olive oil, soy sauce, sesame oil, honey, sriracha, garlic powder, onion powder, and chili flakes. Season with salt and pepper.
Add the salmon cubes and toss to coat. Cover and refrigerate for at least 20 minutes – longer if possible. The longer it marinates, the more flavor it absorbs.

2. Bread and airfry
Take the salmon out of the marinade (don’t discard it!) and coat the cubes in panko breadcrumbs.
Place them in the airfryer basket with a little space between each piece. Cook at 200°C for about 8–10 minutes, until golden and crispy.

3. Prep the vegetables
